Autumn Pumpkin Roll

October is a pumpkin harvesting month, and also a time for making delicious amber-color pumpkin dishes, like cream-soups and pies. And the Halloween is coming very soon! I love this time of the year, I believe autumn is the most beautiful season. Well, Emirati autumn is different, but let me pretend that it’s autumn here. 😀 It’s raining outside, and golden, brown and flame-colored laves are falling down from trees..
In real the heat is becoming less intense and nature is waiting for the cool season to come.
And only one thing is on my mind – baking! This is one of quickest recipes, I swear! 😀 Especially, if you already have puff pastry in your fridge. So, you need cut pumpkin and apples, and saute it in butter, then mix with couscous and roll into puff pastry. That’s it! Since I prefer not very sugary bakes, I make the roll almost not sweet, the sweetness of pumpkin and apples is more than enough here. I slice the ready roll and serve warm with hot tea. 🙂 In case if you want sweeter, add more raisins and brown sugar! Anyway, the roll will be so delicious and comforting!
It doesn’t matter what’s the weather outside, when your home is filled with amazing scent of dark brown sugar, cinnamon and baked veggies!
Autumn Roll

Autumn Pumpkin Roll

I suggest to make own puff pastry, you can keep it in the freezer for several weeks, or if it’s store-bought, be sure that it made from butter not palm oil or margarine!
You may vary the quantity of pumpkin and couscous to suit your taste.
Ingredients
250g butter puff pastry
150-200g pumpkin
1 small apple
1 Tbsp lemon juice
1/2 Tbsp butter
50-60g couscous, cooked
30g raisins (black or golden)
1 Tbsp dark brown sugar (or increase for sweeter option)
1/3 tsp cinnamon
a pinch of salt
1 egg yolk

Method
  • Cut apple and pumpkin into small cubes, add to the pan with butter, drizzle with lemon juice and saute on medium-high heat for 5-6 minutes. Let the mixture cool.
  • Soak raisins in warm water or cognac for 10 minutes, then drain.
  • In a medium bowl combine pumpkin, apple, raisins with couscous. Add salt, sugar, cinnamon and give it a good stir.
  • Arrange the mixture on the puff pastry sheet. Make the roll, brush it with egg yolk.
  • Bake in preheated 180C/360F oven for 25 minutes.
Serve warm with tea in your favorite tea cup! 🙂
Happy autumn! ❤

Perfectly Simple Cabbage Pie

I have made a puff pastry! Can you believe?! 😀 And it was a classic recipe, not a cheat one. Though it has turned out not really good as I expected, I think I put a bit much of butter, or it wasn’t very cold.. But I’m still proud of myself, and the pastry is hundred times better then the store-bought. Moreover, puff pastry in stores is usually made from margarine or palm oil, which are trans-fats, the worst type of fat you can consume.

Cabbage Pie

The below recipe is a classic recipe of Russian cabbage pie. This time I used puff pastry, the pie turned out crispy, buttery, comforting and so tasty! When I lived in Russia, usually we made a good quantity of this dough (which I used in koulebyaka-pie), and made one huge pie with savory filling; if we’d had some remaining dough we made small pirogki (small pies) with jam or sweet tvorog (cottage cheese).
There is no filling recipe, because it’s hard to count grams of cabbage if you don’t know how big or small will be the pie. One loves when the dough is thick, another when the filling is falling out from the pie. You can have a look ‘the guide how to’ below, but the quantity of ingredients adjust to your own taste.
For the cabbage filling, shred some fresh cabbage, and slightly braise it along with chopped onion and spices. Then add coarsely chopped hard-boiled eggs, and season with salt, that’s it! The lovely cabbage filling is ready!
I know, the pie is very simple, but it’s so comforting, that after first bite you begin to feel like you are at home.. Sweet home! ❤ I’m bringing the pie to all party-people over there; I truly hope you will enjoy it!

Russian Cabbage Pie

The pie is equally good reheated for lunch or dinner next day!
Ingredients
Cabbage filling
Fresh cabbage, shreded
1 small or medioum onion, finely chopped
1-2 tsp cumin
2-4 Tbsp chopped fresh dill, optional
sea salt, to taste
2-3 Tbsp sunflower oil
2-3 eggs, hard-boiled
Puff pastry
300g flour
50g chilled butter
a pinch of salt
150ml very cold water
220g chilled butter for layering
Glazing
1 egg  yolk + 1 Tbsp milk or only milk
sesame seeds for decoration, optional

Method
In a big frying pan, add onion, cumin, cabbage and fry on a moderate heat for 5-10 minutes. Reduce the heat, add salt, some water (if the cabbage begins to burn), cover and braise for 15-20 minutes or until tender. Season with salt, add chopped dill, if desired. Mix with chopped eggs.
Brush the pie with egg wash, sprinkle with sesame seeds. Bake in preheated 180C/360F oven for 25-35 minutes (the mentioned time is enough even for a big pie).
Let it cool for 10 minutes. Enjoy with a glass of milk!

Salad with sauteed vegetables

I want to thank all for your lovely comments on my previous post!
What’s the weather in your country? What do you do to stay chilled? Hiding at home, eating ice cream all days long or chilling near the swimming pool with a cocktail..;) In Dubai almost everybody is hiding inside houses, malls.. Moreover, it’s Ramadan, to drink or eat in public is prohibited until the sunset.
I’m trying to eat more balanced and healthful meal this month, like the below salad. It’s summery and..just eat the salad, man! 😀

Mini Appetizer: Goat Cheese Balls

Goat cheese must be the most controversial cheese. One does like it, another hate. What about you, dear reader? Do you like goat cheese or its odour is too pungent for you?
Whatever you goat cheese stance, I suggest you to try it! May be you will find you earthreal cheese! 🙂
I couldn’t find a good goat cheese, when I lived in Russia, there was no any variety even in supermarkets. You could find the goat milk, which was sold by farmers in the countryside, but usually only milk, they didn’t produce any goat cheese. There were plenty of soft and hard farmer cheeses but made from cow milk. Thus many people haven’t try goat cheese. Of course the situation has changed now.
I was amazed how many goat cheeses are sold in Dubai: fresh, soft and creamy, aged, etc, which are brought here from Europe (usually from France).
Once I watch a food-show and chef made a salad with mini cheese balls, covered with parsley. I liked the idea.. After several days  I created my own appetizer to impress my guests.
It looks like a gourmet appetizer, and it’s certainly good if you don’t want to hang around the kitchen for hours. 😉

If you want to make it ahead of time, you can roll the balls and roast beetroots 1 to 2 days beforehand.
Ingredients:
150g soft goat cheese (I used honey-flavoured)
1 Tbsp cream cheese
a pinch of sea salt
1/3 tsp white or pink pepper, freshly ground
1-3 Tbsp walnuts, finely chopped
1-3 Tbsp fresh thyme, sage, flat-leaf parsley, finely chopped
1-2 small beetroots
1-2 small tomatoes
Dressing:
1 Tbsp olive oil
1/2 tsp wholegrain mustard
1/2 tsp liquid honey
Method:
  1. Wash and clean beets, cover with a foil and bake in preheated oven 200C/400F for 30-45 minutes, depends on the beets’ size.
  2. Cut the beets and tomatoes into equal circles, and arrange them on a serving plate.
  3. In a bowl combine goat and cream cheeses along with salt, pepper and walnuts. Spoon cheese mixture and form into balls (you can use table or teaspoon, depends on a size of your choice).
  4. Gentle roll the balls in herb mixture, coating well. Place onto vegetables.
  5. Serve immediately (with fresh arugula or young chard leaves, if desired), or cover and refrigerate until ready to serve.
  6. Optionally, you can make a dressing and pour over cheese balls and salad.
TIP: You can add 1-2 fresh or dried finely chopped figs into the cheese mixture.
I’m bringing this dish over to FF tonight! Hopefully, someone has brought a good bottle of wine.. 😉 And don’t forget to bring the good mood to the party!
 ENJOY!

5-star Salad

I feel very honoured that I took the 1st place in the challenge held by Angie – Thenovicegardener.  This was my first time I won in food-blogging contest and hope not the last. Thank you all who stopped by my post and made comments about kulebyaka. The kulebyaka is so Russian and delicious pie, and I hope one of you will make it one day. 😉 Feel free to ask me if you have any questions about the kulebyaka preparation.
Is it Friday yet? Oh, yes! That means one more party at Thenovicegardener. Does anybody would like ‘a 5-star salad’? Why 5-star, because it looks posh and the portion is so small like from a high-class restaurant. Moreover, it’s healthy and tasty.
Actually, I made it from the cauliflower remains, when I cooked this soup. 🙂

The dressing:
1/2 tsp wholegrain mustard
1/2 Tbsp extra virgin olive oil
