Millet bitochki

 Bitochki or bitki is the name for round-shaped, flattened cutlets (côtelettes/patties) in Russian cuisine, which are prepared from chopped meat or grains. Originally in old Russia, a good and expensive cuts of meat were flattened, cooked and called bitochki, but lately people adapted the recipe and began to use cheap meat. Any remaining meat was chopped, mixed with other ingredients and then served fried or baked. Poor people even used grains.MIlletBitochki
 Nowadays, not only poor one can make such bitochki. I used millet for mine. Bitochki are not only tasty, but healthy and it is a good option for a meatless day. Millet is one of the healthiest grain, moreover is considered to be one of the digestible and non-allergenic grains*. It contains lots of fiber and low simple sugar. Finally, bitochki have such a nice texture inside (it reminds a white fish a bit) and crispy outside.
 You can serve them with a lettuce-tomato salad on a side. I made mushrooms sauce, but if you are run out of time or lazy – serve with a good dollop of sour cream (or creme fraiche).

Millet bitochki with mushroom sauce

Instead of mushroom sauce you can serve bitochiki with sour cream.
Bitochki as well as mushroom sauce can be made a day or two ahead and then gently reheated.
 
*You can use both cream and sour cream, or any one.
Ingredients
150g millet
500ml hot water
1 medium egg
2-3 tbsp finely chopped parsley
1 medium onion (any sort you like)
300g mushrooms (I used oyester and champinions), chopped
1 tbsp butter+ 1 tbsp olive oil, for mushrooms
20g butter
15-20g plain flour
100ml 35% cream*
2-3 tbsp sour cream*
150ml hot water
salt, freshly ground pepper to taste
2 Tbsp olive or sunflower oil, for frying
some chopped parsely, for garnish, optional
Preparation method
  • Wash millet throughly under running water, cover with hot water, season with some salt, bring to boil, then reduce heat to medium-low and simmer for 20-30 minutes or until millet is ready. You need to cool it completely. To make it faster, spread millet on a large plate and put in a fridge for 10-15 minutes, while preparing the mushrooms and sauce.
  • In a frying pan, heat butter and oil, add onion and fry for 5 minutes (set aside half of onions for millet ). Add mushrooms and fry on a hight heat for 10 minutes or until all liquid is evaporated (if there is any). Season to taste. Set aside 3-4 tbsp mushrooms for millet; then chop it finely.
  • Meanwhile, in a small pan, add butter and flour, stir on a medium heat for 5 minutes. Stir into mushrooms.
  • Pour over cream along with sour cream, give it a good stir. Pour in hot water. Check the seasoning. Simmer on a medium heat for 5-8 minutes. Add more hot water to reach desired consistency. Keep the sauce warm.
  • Transfer cooled millet in a mixing bowl, add egg, parsley, season with salt and pepper. Mix in fried onion and mushrooms. Combine the mixture. I didn’t use any flour, but if the mixture seems doesn’t want to resemble into a patty, add a tablespoon or two of plain flour.
  • Generously spread breadcrumbs on a large plate. With a tablespoon take a millet mixture and make a ball, pat it down with your hand or spoon. Cover in a breadcrumbs. Repeat with all millet mixture.
  • In a large frying pan, heat oil, put bitochki and fry on both sides until golden. To keep it warm while preparing others – put them in a preheated 120-150C oven.
  • Serve with mushroom sauce and sprinkle with extra parsley, if desired.

Sunny pie

 Today is the winter solstice, it is an astronomical event that occurs twice a year (summer and winter solstice). Winter solstice is the shortest day and the longest night of the year. During the paganism time in old Russia this day was a special celebration, which was called Yule night. It was a festive and holy day for the honour of greeting the baby-sun named Kolyada, that was born on this night, which slowly but steady began to be stronger and brighter. That means that with each upcoming day nights became shorter, days longer and sun shone brightly and warmly. In the night people had to get together (there was a superstition that to stay alone in this night was unluckily), they set a big festive fire, sang songs and burnt all old and useless stuff; people also prepared chickens and turkey, baked round pies and praised the Sun.Sunny pie

 As you can see, I’ve tried to make a sun-looking pie. Rich and sweet pastry holds lemon-scented milky filling and all covered with lightly soured apricot puree.  In a word, I liked this bright and tasty pie! It reminds me another pie that I made – ‘cottage cheese and cranberry pie’, so if you liked that one – give a chance to this sunny pie as well. 🙂Sunny pie with lemon-tvorog filling

Lemon-tvorog pie with apricot top

  • Servings: 6-8

I used 20cm loose-bottom baking pan.
*Tvorog is Russian cottage cheese, you can find it in many European or Russian stores.

Ingredients
sweet lemon pastry
400g tvorog*
100g butter,  at room temperature
zest of 1 medium lemon
3-4 tbsp lemon juice
1/2 tsp vanilla extract
3 medium eggs
30g (3 tbsp) brown sugar
30g (3 tbsp) white sugar
60g golden raisins
hot black tea or water, to cover the raisins
2 tsp cornmeal

Preparation method
  • While the pastry case is baking, prepare the filling.
  • In a small bowl, put raisins and cover with hot black tea or water. You can also add a tablespoon of cognac or brandy for extra flavour. Leave to soak while making the diary filling.
  • In a large bowl, whisk tvorog with butter until just combined. In another bowl beat eggs with sugars.
  • Add lemon zest and juice, vanilla and beaten eggs to the tvorog mixture, beat until just combined.
  • Drain raisins and mix into the filling along with cornflour.
  • Pour the filling into the pastry case. Pour the apricot puree over the tvorog filling.
  • Bake in preheated 190C oven for 45-50 minutes. If the top begins to burn – cover it with foil.
  • Let it cool in the pan for 10-15 minutes, then carefully transfer onto the serving plate. Enjoy!
P.S. The filling wasn’t smooth as you can see from the pics, if you like it -ok, if not- you may push tvorog through the sieve.
Sweet lemon pastry
170g butter, at room temperature
50g golden caster sugar
zest of 1 small lemon
1/2 tsp vanilla extract
1 egg (40-45g), at room temperature
260g plain flour
Glaze: 1 small beaten egg yolk, optional
  • In a large bowl, whisk butter with sugar until just creamy. Add lemon zest, vanilla and egg and mix until just combined. Mix in flour. Cover the pastry with plastic wrap and chill overnight or up to 3 days until ready to use.
  • Roll out 3mm-thick (or as thick as you like) circle to cover your baking pan. You can also make ‘sun rays’ and stick them to the base and sides of the pan, but it’s optional step. If you have any pastry remains, roll out it and cut out cookies, then bake it on a baking tray for 10-12 minutes.
  • Put the pan with pastry into the freezer for 10 minutes.
  • Cover the pastry case with foil, add beans/rice/special stones for baking and bake in preheated 190C oven for 20 minutes. Then remove the weight, brush with the glaze (optional) and return to the oven for 5 minutes more.
Apricot Top (optional)
5 small sliced apricots (150g) (or sub with apricot jam)
2 tsp lemon zest
1 tbsp lemon juice
2 tsp cornflour
20-30g (3 tbsp) golden caster sugar
  • Beat all ingredients with electric blender into a smooth puree. The apricot top was slightly sour, if you like sweeter -add more sugar.

Sunday Breakfast: Savory bread pudding

  During the week I’m trying not to buy an extra loaf of bread, if I still have some leftover. But when I see a freshly-baked croissants it’s so hard to resist.. And the poor leftover bread is lying and waiting to be used somehow. Though I use leftover bread and make breadcrumbs with herbs or croûtons for a soup-puree, but sometimes I simply do not need it. Several years back when I started being interested in various cuisines and tried to cook different recipes, I stumbled upon one English recipe – ‘bread pudding’. I was surprised how simple this dish is, and lately – how trendy it can be. It dates back to the early 11th century England and was a popular dish among poor classes, because leftover bread was used for this frugal meal. We have similar dish in Russian cuisine, which is called ‘grenki’ (fried bread); for that we just dip white bread slices into a mixture of eggs, milk and sugar, and then fried it. But what I like the most in English version, that I can bake it and even make it a night ahead. Plus there are endless possibilities for bread pudding: I can add soaked raisins, fresh peaches or any other available berries, vary the type of bread and even make it savory! And that’s what I did this time – I cleaned up my fridge and used not only bread leftovers, I added fried mushrooms with onions (have got some from a pie filling), some peas and cheese. Also tried to add some fried smoked bacon, it adds a nice smell and taste.
Ingredients
few white bread slices, cut into cubes
2 eggs
80ml full-fat milk
1/2 dried thyme
salt, freshly ground black pepper, to taste
fried onions+ mushrooms
a handful of peas (if using frozen, no need to defreeze)
50g feta or mozzarella cheese, cut into cubes
some grated parmesan, optional
1-2 tsp butter or oil, for greasing baking dish
Method
  • Preheat oven to 190C. Grease a baking dish, arrange bread cubes.
  • In a bowl, whisk eggs with milk and spices. Pour over bread crumbs, mix with your hands or a spoon.
  • Mix in fried mushrooms, onions and peas. Season with some extra pepper. Put in the oven for 14-15 minutes.
  • Take the dish out and top with feta or mozzarella cubes. Sprinkle with some parmesan as well, if using. Put back into the oven for 5 minutes more.

Serve immediately for breakfast! Enjoy!

P.S. Even if the bread is too stale, don’t throw it – go outside and feed birds! 🙂

Sunday Breakfast: Cheesy Onion Cookies

 Hello-hello! It’s been a kind of hectic week and I really didn’t have a time to post anything. But I can’t skip the Sunday breakfast series, so I decided to reblog one of my old recipes – savory onion cookies! I love this recipe: it’s quick&easy what especially valuable in the morning (ok, may be not that quick as a fried egg but worth any minute), and of course these cookies taste incredible! Buckwheat porridge with caramelized orange and figs

 Another Sunday, and here is another idea for Sunday Breakfast! This time it is a well-balanced, healthy and very tasty buckwheat porridge, that makes a fantastic breakfast treat. I guess many of you need something special to pull yourself out of the bed in the cold autumn mornings, and this warm and cozy porridge does help you!Buckwheat Porridge

 I used for it buckwheat flakes mixed with some oats. Do you know, that buckwheat grain provides a very high level of protein, second highest only to oats! It makes this porridge high in energy, so it might help you to do more housework during the day or just stay in a good mood! 😉 For those of you who not especially concerned with buckwheat nutritional benefits, it is also tastes delicious and has a delightful nutty flavour. Plus, I topped the porridge with caramelized orange slices and figs, now you can imagine how divine and irresistible it was! Buckwheat porridge with caramelized orange and figs

You may drizzle the porridge with honey.
Ingredients
Porridge
100g buckwheat flakes
50-60g oatmeal
100ml water
300ml milk (I used full fat)
a pinch of salt
1 tbsp white or brown sugar (to taste)
vanilla pod or 1 tsp vanilla extract
Topping
3-4 tbsp white sugar
2 large figs or 3 medium, cut into fourths
1 large orange, peeled and cut into 1cm slices
2-3 tbsp lemon juice
8-10 whole toasted almonds, roughly chopped
Method
  1. Put the water and milk in a saucepan over a medium heat, when it just begins to boil, add buckwheat flakes, oatmeal and all other ingredients for the porridge. Stir to combine. Reduce the heat to low, simmer for 5-6 minutes, stirring occasionally. If the porridge is too thick add more milk or water. Turn off the heat, cover with a lid and leave for 4-5 minutes.
  2. Meanwhile, put a pan with sugar on a medium-high heat. Don’t stir it, allow to become lightly golden. Add figs and orange slices, caramelize for 2-3 minutes on each side. Turn the heat off. Take out figs and orange slices. Add lemon juice to the pan and stir with all sugar and juices in the pan.
  3. Spoon the porridge into bowls and top with figs and orange slices. Pour over the sweet juice from the pan. Sprinkle with almonds.
Enjoy warm and cozy breakfast!
