Grilled Tiger Prawns

 Summer is a lovely time to spend outdoors, having a barbecue, grill meat and veggies, enjoying weather..with some exception for Dubai, it’s terribly hot; the barbecue standing lonely, and waiting for the chilly days to be dust off.. If you are lucky and enjoying weather, I recommend to try this one of the most flavorful grilled prawns recipe I have tried (or grill it in the oven). Grilled Tiger Prawns

  • Servings: 3-4
  • Difficulty: easy

2-3 prawns per person are enough for an appetizer, but for the main course increase the quantity as many as desired.

Can be served with a glass of good wine and pineapple salsa.

Ingredients

12 tiger prawns

1 shallot or small red onion

3 garlic gloves

1 small red chilli, optional

1 Tbsp fresh coriander, finely chopped

½ lemon, juice

sea salt, black pepper to taste

Butter Sauce

60g butter

2 Tbsp coriander, finely chopped

2 Tbsp lemon juice

  • Cut prawns in the middle and clean. You can cut off heads or leave it. Arrange them in a big shallow dish.
  • Finely chop shallot, garlic and chilli. Sprinkle it over prawns along with coriander, add salt and pepper to taste. Cover the dish and let it marinate in the fridge for 1-3 hours or overnight.
  • Remove from the fridge 30 minutes before grilling. Grill for 5-7 minutes.
  • Make the sauce. Heat the butter in a small pan, add remaining coriander and lemon juice; adjust seasoning.
  • Serve hot! Enjoy!

What’s the weather in your country? What do you do to stay chilled? Hiding at home, eating ice cream all days long or chilling near the swimming pool with a cocktail..;) In Dubai almost everybody is hiding inside houses, malls.. Moreover, it’s Ramadan, to drink or eat in public is prohibited until the sunset.
I’m trying to eat more balanced and healthful meal this month, like the below salad. It’s summery and..just eat the salad, man! 😀

Salad with sauteed vegetables

  • Servings: 2-3
  • Difficulty: easy

Aromatic herbs make it so good and appetizing! Eat as is or with grilled sausages.
Ingredients:
2 zucchini/6-7 baby/~600g
2 medium apples, juicy and sour
6 cherry-tomatoes or 1 large tomato
1 red onion
1 clove of garlic, smashed
zest and juice of half lemon
1 tsp fresh thyme or 1/2 dried
2-3 Tbsp parsley/coriander/mint, finely chopped
salt, white pepper to taste
1-3 Tbsp olive oil
  • Cut the onion and slice into half moons. Heat the olive oil in a pan and fry the onion until tender.
  • Chop the tomato and apples, add to the pan along with garlic and thyme, mix and sauté for 2-3 minutes more. Discard the garlic, put the vegetable mixture in a bowl, set aside and keep in a warm place.
  • Slice zucchini, add it to the frying pan along with lemon zest and sauté on a medium hit until tender. Add more oil if needed.
  • Add the veg mixture into zucchini, mix and heat for 1-2 minutes.
  • Put all the veggies in a big serving bowl, add mint and/or parsley, salt&pepper and squeeze lemon juice. Drizzle some extra olive oil over the salad, if desired.

Mini Appetizer: Goat Cheese Balls

 Goat cheese must be the most controversial cheese. One does like it, another hate. What about you, dear reader? Do you like goat cheese or its odour is too pungent for you?
 Whatever you goat cheese stance, I suggest you to try it! May be you will find you earthreal cheese! 🙂
 I couldn’t find a good goat cheese, when I lived in Russia, there was no any variety even in supermarkets. You could find the goat milk, which was sold by farmers in the countryside, but usually only milk, they didn’t produce any goat cheese. There were plenty of soft and hard farmer cheeses but made from cow milk. Thus many people haven’t try goat cheese. Of course the situation has changed now.
 I was amazed how many goat cheeses are sold in Dubai: fresh, soft and creamy, aged, etc, which are brought here from Europe (usually from France).
 Once I watch a food-show and chef made a salad with mini cheese balls, covered with parsley. I liked the idea.. After several days  I created my own appetizer to impress my guests.
 It looks like a gourmet appetizer, and it’s certainly good if you don’t want to hang around the kitchen for hours. 😉
Goat cheese starter

Mini Appetizer: Goat Cheese Balls

  • Servings: 5-6
  • Difficulty: easy

If you want to make it ahead of time, you can roll the balls and roast beetroots 1 to 2 days beforehand.
Ingredients:
150g soft goat cheese (I used honey-flavoured)
1 Tbsp cream cheese
a pinch of sea salt
1/3 tsp white or pink pepper, freshly ground
1-3 Tbsp walnuts, finely chopped
1-3 Tbsp fresh thyme, sage, flat-leaf parsley, finely chopped
1-2 small beetroots
1-2 small tomatoes
Dressing:
1 Tbsp olive oil
1/2 tsp wholegrain mustard
1/2 tsp liquid honey
Method:
  1. Wash and clean beets, cover with a foil and bake in preheated oven 200C/400F for 30-45 minutes, depends on the beets’ size.
  2. Cut the beets and tomatoes into equal circles, and arrange them on a serving plate.
  3. In a bowl combine goat and cream cheeses along with salt, pepper and walnuts. Spoon cheese mixture and form into balls (you can use table or teaspoon, depends on a size of your choice).
  4. Gentle roll the balls in herb mixture, coating well. Place onto vegetables.
  5. Serve immediately (with fresh arugula or young chard leaves, if desired), or cover and refrigerate until ready to serve.
  6. Optionally, you can make a dressing and pour over cheese balls and salad.
TIP: You can add 1-2 fresh or dried finely chopped figs into the cheese mixture.

Pancake Pie

 Today is ‘Forgiveness Sunday’, the last day of the ‘pancake festival’ (Butterweek) in Russia.
According to one old tradition, the more pancakes have been eaten during the Butterweek, the more successful will be the year.
As per another custom, a girl at the twilight, should took a pancake, went out and asked the first stranger his name. It was believed, that man’s name and look is similar to the future husband’s appearance. In case if the girl didn’t like the name ‘n’ look, she had to give a pancake to the guy. If she liked it, she had to eat a pancake herself. 🙂
 There are lots of pancakes varieties, with savoury or fruit fillings. Mine 3 favourites: with cottage cheese, sweet condensed milk and salmon 🙂
 Making pancakes could be really exciting and interesting, you can involve the whole family, invite friends and enjoy the holiday.
 You can surprise your family by preparing this delicious pancake pie!

The basic Russian pancakes recipe
Serves 4-6
Ingredients:
650ml full fat milk
50ml warm water
250g all-purpose flour
2 eggs
a good pinch of salt
2 tbsp of sugar
2 tbsp of sunflower oil
1/3 tsp baking soda
1/2 tsp of lemon juice or vinegar
Preparation:
  • Break the eggs into large bowl, add salt and sugar, whisk.
  • Add the oil and milk, whisk again.
  • Sift the flour into the bowl, whisk thoroughly.
  • Add warm water and whisk to incorporate any lumps.
  • Pour lemon juice or vinegar into a spoon with baking soda on it (to dissolve the soda), quickly add it into the batter and whisk a couple of times.
  • While the mixture is resting (it allows the ingredients to blend together better), heat the pan; grease the pan with some oil, if needed.
  • Evenly coat the pan with the batter. Cook about a minute, then flip the pancake and cook for 15-30 seconds more.
  • Keep prepared pancakes in warm place.
 You can already enjoy the tastiest pancakes, dipping them into a raspberry preserve or hazelnut sauce, or prepare the pancake pie with salmon. It could be wonderful lunch or dinner for the weekend. Pancake_pie_caviar-2
Pancake pie with salmon and cream cheese
Serves 4-5
Ingredients:
8 pancakes
200g salted or smoked salmon, always better homemade (find the recipe here)
120-150g cream cheese
2tbsp sour cream (substitute with crème fraîche, or single/double cream)
4-5 tbsp finely chopped dill
I used red caviare for the decoration, you can do it with salmon or just keep the top as is.
Assembling:
  • Blend the cream cheese with sour cream until smooth.
  • Cut the salmon into small cubes.
  • Arrange the first pancake on a plate, spread the cheese mixture and sprinkle with dill.
  • Cover with the second one. Spread some salmon on the pancake.
  • Cover with the third pancake.
  • Repeat all steps.
