Pear&Blackberry Tart

 Last weekend I wanted to make a cake, I was dreaming about a huge layered cake with delicious and sweet cream, topped with chocolate or strawberries, or blackberries.. At the end of the day I realized that I can’t decide which one to make and I don’t have all required ingredients. 😀 But I have always been a person that needs something sweet after dinner. I wanted a dessert to satisfy my sweet tooth, and better with cream! So I’ve come up with this beautiful and absolutely delicious ‘pear and blackberry tart’. Honestly speaking, I haven’t made this recipe a dozen or even a couple of times, it was perfect from the first attempt! Nutty shortbread base, tender whipped ricotta cream, pear slices and blackberries – all those things merged together into divine combination. I believe that you would find this dessert to be as delicious as it looks! You just need to go to the kitchen, cook it and enjoy! 🙂 I will make it again for sure!

Pear and Blackberry Tart

  • Servings: 4-6

You can use any favourite fruits and berries, like strawberry&blueberry, raspberry&nectarines.
Ingredients
Short pastry (base)
1 large egg, at room temperature
100g plain flour
75g butter, cubed and softened
35g fine sugar
30g ground almonds
Topping
100ml whipping cream (30-35%), cold
1+1 Tbsp icing sugar
1 tsp cognac or brandy, optional
100-120g ricotta
1 tsp vanilla extract
1 tsp lemon zest
1 large pear, sliced
1 Tbsp lemon juice
8-10 blackberries
2-3 strawberries, sliced, optional
1 Tbsp white chocolate chips
  1. Whisk the egg and set aside a half (a bit less then half) for a glaze.
  2. To make the dough, in a large mixing bowl or food processor, mix flour, butter, sugar, half the egg and almonds until combined. Tip dough out onto a floured surface and bring together with hands.  Make a flat disk, cover with plastic wrap and chill for 30-40 minutes in a fridge.
  3. On a lightly floured table roll the dough into 21-22cm circle. Brush with remaining egg. Transfer to a paper-lined baking dish.
  4. Bake in preheated 180C oven for 25 minutes or until golden. Allow to cool completely.
  5. Meanwhile, in a bowl beat cream with 1 Tbsp icing sugar and cognac, if using, until soft peak begin to form. In another bowl, combine ricotta, vanilla, lemon zest and sugar. Add ricotta mixture into whipped cream and whip until smooth for a 1-2 minutes.
  6. Spread cream on the base. Sprinkle pear slices with lemon juice. Arrange pear slices, blackberries and strawberries, if using, on the cream, and sprinkle over chocolate chips. Dust with extra icing sugar, if desired. Enjoy!

Apple soufflé

 It seems I’d been eating and eating during the past two months, too many delicious pies and sweets, so me and my husband decided to limit the amount of sugar and fat in our regime and keep more healthy diet for a month or so. Diet doesn’t mean the food should be tasteless and dull. Thou, plain meal like steamed fish with broccoli or buckwheat isn’t so bad, especially after a few days of eating it without adding too many salt, spices, butter, cheese or whatever makes it more yummy. 😀
 Another happy moment – desserts for healthy diet do exist! A good and tasty example is Apple Souffle. Apples are baked, then pureed and mixed with egg whites, after those easy steps you need to bake it and voila – tender, airy and delicious dessert is ready! 🙂

Apple soufflé

  • Servings: 2
  • Difficulty: moderate

You can serve apple soufflé with cold whipped cream or a glass of cold milk.
Ingredients
300-350g apples
2-3 tbsp water
2 tbsp white caster sugar
1 tsp cinnamon, optional
2 egg whites
a pinch of salt
some butter or oil for greasing
Instruction
  1. Wash, peel, core and cut apples into 4 slices. Put on a baking tray, add water and bake in preheated 180C oven for 20-30 minutes or until soften.
  2. Puree apples. Put apple puree in a small pan, add sugar and cinnamon, cook on a medium heat for 10 minutes, stirring occasionally.
  3. Meanwhile, beat egg whites with a pinch of salt until soft peaks. Continue beating, add warm apple puree and beat all together for 2-3 minutes more.
  4. Brush ramekins with butter, pour in apple mixture. Bake in preheated 180C oven for 15-20 minutes.
  5. Serve warm. Enjoy!

Saffron buns

 Hello guys! It’s not a secret that I love to bake! And I have to say even more – I’m addicted to pies! 😀 Every time when I stumble upon a new and interesting pie or cake recipe I’m anxious to prepare it! What does attract you in a recipe? An ingredient, a photo or may be a story behind it? For me an every part is captivating and intriguing! As I’ve already said I love to bake whatever it is, whether it’s a vegetarian or sweet thing, like comforting cabbage bake with farmer cheese or beautiful apple pie with semolina. A long time ago I was browsing the Internet and found one lovely recipe of saffron buns, but time has passed anf it got out of my mind until I bought saffron last week. I was glad to discover the story about these buns, because the story is truly magical and wintry.
Every year on the 13th of December people of Scandinavia countries (Norway, Denmark and Sweden) are celebrating the Day of St.Lucia. It’s believed she brings the light into the longest night of the year. Celebration include a procession of young girls in white dresses and red sashes carrying candles. One girl represented as Lucia – she wear a crown of candles on her head. Girls sing traditional and Christmas songs.
By another Sweden custom at home the eldest daughter arising early in the morning, wearing the Lucia’s costume, awaking the family and serving them coffee and saffron buns.*

 After reading about Scandinavian traditions and stories I decided to make those delicious buns! and by coincidence I baked them exactly on the 13th. I made some research and finally created my own recipe. Buns turned out very fluffy, nicely buttery, with amazing aroma of saffron and not very sweet.

  • Servings: 8 buns

Ingredients St.Lucia saffron buns
120ml full-fat milk
1/2-1/3 tsp saffron threads
45-50g butter, room temperature
250-300g plain flour
4g instant yeast
1/2 tsp salt
30-35g sugar
2-3 cardamom pods, ground, optional
a pinch of freshly grated nutmeg, optional
1 large egg
60ml sour cream
Preparation method
  • Heat milk with saffron (don’t boil) in a small saucepan over medium-low heat. The temperature of milk should  be not over 40C/104F or should be able to easily hold a finger in it. Add butter, stir to combine.
  • In a mixing bowl sift the flour (250g, then add more if needed), add yeast, salt, sugar and spices if using. Mix.
  • Add lukewarm milk mixture to the flour. Stir to combine.
  • Add egg and sour cream. Mix ingredients until well incorporated.
  • Now on a flat surface knead the dough by hand (or use a hook of your standing mixer) for 10 minutes, until smooth and a little sticky to the touch.
  • Cover the dough and leave it to rise for 1 hour at room temperature or until it’s puffy. You can make the dough the day before, in which case after rising gently deflate the dough, cover and leave in the fridge overnight. Take out an hour or two before shaping, let it gets warm and rise again.
  • Gently deflate the dough, and divide into 8 equal sizes; each piece weight about 70g.
  • Roll each piece of dough at a time into a 38-40cm rope, then shape each rope into S-shape.
  • Place buns on the lined baking tray. Tuck in raisins. Cover with a towel and leave to prove for 30 minutes.
  • Brush with egg wash and in preheated 190C/375F for 15-20 minutes or until they’re golden brown.
  • Take buns from oven and let cool for 4-5 minutes before serving.
  • Serve warm with a glass of milk or tea.

German Cheesecake – Käsekuchen

 Last weekend I went shopping to the local supermarket and found a dairy product which was new to me – fromage fraise (quark). So, I bought the quark in the hope of finding a recipe and use it somehow. I was browsing the net, when stumble upon the info that Germans making their cheesecake version and using quark; even though I use Jamie Oliver’ cheesecake recipe most of the time, I decided to try new recipe without hesitation. And what do you think! The cheesecake turned out golden and very fluffy, but after setting in the fridge it fell down.. The texture was creamy and tender, and it reminded me the bake with cottage cheese from my childhood. So, if you are not fun of heavy and over-sugary cheesecakes, it’s your option! German Cheesecake - Käsekuchen

Ingredients for 22cm baking pan

Crust
170g all-purpose flour
1/2 tsp baking powder
a pinch of salt
1 tsp vanilla extract or vanilla sugar
1 Tbsp granulated sugar
70g butter
1 egg
Filling
600g quark
3 eggs, separated yolks and whites
150g granulated sugar
80g butter, at room temperature
1/2 lemon, grated zest, optional
180ml heavy cream
vanilla bean, seeds
1 tbsp cornstarch
1 tsp lemon juice
a pinch of salt
Method
  • Crust. Sift the flour in a big mixing bowl, add baking powder, salt, vanilla, sugar and mix. Add butter and egg, knead until smooth. Cover the dough and keep in the fridge for 30 minutes.
  • Filling. Beat egg yolks with sugar and vanilla until pale. Add butter, lemon zest and beat again. Add heavy cream and quark and stir to combine. Beat egg whites with salt and lemon juice until stiff; then gently fold into the quark batter along with cornstarch, adding a little at a time.
  • Line the baking pan with paper. Roll out the dough into 30cm circle, or simply place it in the baking pan and press it, pushing it up the sides to make a rim.
  • Pour the filling over crust and smooth with spatula.
  • Bake in preheated 160C oven for 45-55 minutes until the top is golden and the filling set. If the top browning too much, cover with a piece of foil.
  • Cool the cheesecake at the room temperature, then cover and refrigerate for 3-6 hours or overnight.

Cheesecake/Quarkcake

Jam Cake

 This cake is well-known in my home-country, and it’s quite popular among village people, or at least who prepare homemade jams. Oh, we love make jams in Russia! Nothing can beat a real homemade jam, jam for which you picked up fruits or berries yourself in the garden or forest during summer. And like everything is done at home the taste of every jam in every home is unique. When it is dark and dank outside, or even when it’s a snowstorm during cold Russian winters, it’s such a great pleasure to be at warm and cozy home, sip a hot herbal tea with a spoon of jam, or spread it thickly over a piece of bread.
 Many Russian grandmothers used to make this cake, mainly when was a cup of jam left, and nobody wanted to eat it up. Among such ladies was grandmother of my classmate, she used to make delicious cake with strawberry jam! 
 The cake recipe is very easy and quickly to prepare, you need only few ingredients and patience while it cooks, and the result is sweet and tasty cake! Ability to use any jam is excellent, every time you’re getting new-flavoured cake! Isn’t it cool?

Ingredients
200ml jam, not watery (I used plum jam)
200ml full fat kefir
1 tsp baking soda
50-100g white sugar, depends how sweet is jam
1 big egg or 2 small
300-350g all-purpose flour
In a big bowl, mix jam and soda, leave it for 5 minutes. In another bowl, slightly beat eggs with sugar. 
Add kefir and beaten eggs into jam mixture, stir well. Add flour, and combine all ingredients.
The consistency of the batter should be little bit thicker than for pancakes.
Pour batter into greased pan, bake in preheated 180C/360F oven for 50-60 minutes.
Sprinkle with icing sugar and decorate with fruits or berries, if desired.
