Winter cake with red berries

Red berries and cheese make this cake a frequent guest on my table during the winter. ūüėÄ It looks gorgeous and tastes delicious! Perfect for holiday season!

INGREDIENTS

100g butter, very soft at room temperature

150g Philadelphia cheese or smooth cottage cheese

120-140g sugar

2 eggs, at room temperature

130g self-raising flour (or plain flour+ 1tsp baking powder)

2tsp mandarin or orange zest

1tsp lemon zest

200g mix of cranberries, redcurrents and raspberries, fresh or frozen (no need to defreeze)

50-70g flaked almonds

METHOD

Beat the cheese, butter and sugar together.

Add eggs to the batter mixture, one at a time, beating rapidly.

Stir in mandarin&lemon zests.

Sift the flour and mix to combine.

Finally, carefully stir the berries into the batter.

Sprinkle the cake with flaked almonds or your favorite nuts.

Bake in preheated oven 180C/360F during 35-40 minutes.

The little tiny Holiday cookies

Christmas and New Year are definitely my favourite holidays. Hustle and bustle time. Snowing outside, everybody is in rush, searching presents and gifts for the loved ones. Unfortunately in the UAE I can’t feel such wonderful emotions in full, but I can bring the festive mood and flavours to my home by baking some winter treats.

¬†These little cookies are so rich in chocolate, that could give little more warmth for the family tea-time. Adding some spices-cloves, cinnamon or cardamom and a small hazelnut or pistachio inside is also great! ūüėČ

And if you pack them in a little Xmas box ‚Äď it might be amazing gift for a friend.

I’m pretty sure that better to double the amount of the ingredients, so you don’t need to cook it twice! Cookies-2

Ingredients:

1 egg

50g/2 Tbsps sugar

60g dark chocolate (60-70% cacao)

100g/4-5 tbsp flour

1 Tbsp butter

Icing sugar ‚Äď to cover the cookies

Method

Melt the chocolate and butter together in a bowl under the simmering water, gently stir.

Whisk the egg and sugar together in another bowl until light and fluffy.

Carefully fold in the chocolate mixture, then add the flour and combine.

Scoop the cookie batter with a teaspoon, shape small balls and roll them in plate with icing sugar.

Place on a baking tray and bake for 9-10 minutes in a preheated oven 180C/360F.

Apple pie with semolina

There are so many things I love about autumn!
Chose a day in our rush-life-time and stop! Stop and look around! You could see many bright colors, that golden fall has brought for you. Browny-orange and fiery red leaves are falling from trees. Gloomy and gray sky. Breeze in! Cooling and lightly burning air. 
 
What an amazing day to bake a warm apple pie! ūüôā

Ingredients:
 
Apples (pink lady) 3
Cottage cheese 100-150g (1/2-2/3 cups)
A handful of raisins, optionally
Butter 50-70g (4-5 Tbsp), melted
Semolina 150g (1 cup)
Flour 2Tbsp
Egg 1
Sugar 100g (1/2cup), I used brown  
Cinnamon 1/2 tsp, optionally
Baking soda 1tsp
Bread crumbs or crushed nuts (hazelnuts, almonds) 1-2Tbsp, optionally
 
I forget to put soda in the pie mixture¬†sometimes, so don’t worry if you’ve done the same, the pie will be nice and tasty anyway! ūüėČ
Using fine semolina makes the pie more fluffy, however, I used that time coarse-grained and the pie was none the worse.;)
Feel free to change a quantity of the ingredients to suit your own taste.
 
Method:
 
Slice the apples, sprinkle with sugar and cinnamon.  
Meanwhile, combine cottage cheese and egg. Add semolina, flour, soda and melted butter, mix.
Add apples, raisins and carefully combine.
Butter the baking pan, sprinkle some bread crumbles or crushed nuts, add the apple mixture.
Bake until golden color for 30-40 minutes. 200C/400F

Sponge Cake with Strawberries

The summer is over in some countries, and autumn’s come. Hope you enjoy it!¬† If only it could be here for a day..

It was usual hot summer day, when ‘why not to make a nice cake with strawberries’ idea came into my mind. I went for the widely known sponge cake, which in Russia is often called biscuit cake. In the US it’s known as pound cake, while in the UK as Victoria cake. Pretty simple to make, could be layered with various berries and feelings.

I soaked sponges with cherry brandy to pep it up.¬† ūüėČ

Ingredients for 20 cm/8 inch round pan:

200 g self-raising flour
3 large eggs
160 g butter, melted
100/150 g granulated sugar*
1 tbsp lemon or orange zest (optionally)
1 vanilla pod or 1 tsp vanilla extract (optionally)
a pinch of salt

For cream filling:

200 ml whipped cream
80/100 gr caster sugar*

For brandy syrup:

6 tbsp water
2 tbsp sugar
3 tbsp brandy**
300-400 g strawberries***
2 tbsp icing sugar

Directions:

  1.  Heat oven to 160C (350F). Butter and flour a cake pan.
  2. Whisk together eggs and sugar until light cream texture. Add melted butter, salt, lemon zest, vanilla extract and beat in.
  3. Sift the flour over bowl and gently start to fold in.
  4. Bake 25-30 minutes or until top of cake is golden.
  5. Meanwhile, prepare brandy syrup. Combine sugar and water in a saucepan, simmer until sugar is dissolved. Remove from a heat and stir in brandy.
  6. Remove the cake from oven, cool in a pan for 10 minutes. Take cake out of pan and put onto a wire rack and let it cool completely.
  7. While cake is cooling, cut strawberries into medium-thin slices. Sprinkle with icing sugar.
  8. Whisk whipped cream and sugar together (for 4-5 minutes).
  9. Time to assemble our cake. With long knife cut cake horizontally into 2 layers.  Brush each layer with brandy syrup. Spread 2/3 of strawberries over one layer, then half of whipped cream.  Cover with another sponge. Spread whipped cream over it, top with remaining strawberries.
  10. Refrigerate for 1 hour.

Serve with tea and enjoy!

*In every day life I consume very small amounts of sugar. In all recipes I put it roughly. But you can increase amount as much as you like it.

**Substitute brandy with cognac/rum or non-alco liquor. 

*** Substitute fresh strawberries with preserved.

Mascarpone dessert

  Summer is the time for berries! Choose any berries you like- raspberries, strawberries, blackberries and layer with creamy topping and the easiest dessert is done!

¬† So we need some berries fresh or frozen. Combine them with icing¬†or fine sugar and zest of lemon,¬†it helps to release their ¬†juices,¬†add a bit of wine or liqueur¬† for taste. Let stand for 20-30min. Don’t be upset a lot if you have no berries or may be it’s winter now and berries are quite expensive, use jam! ūüôā
¬† In a bowl with whisk or an electric mixer beat together mascarpone,¬†yogurt¬†and honey until mixture holds stiff peaks. You’ll get velvety, delicately sweet mascarpone mixture!
¬† I’m not¬†adding heavy cream/whipped cream to mascarpone – I put yogurt. In my¬†opinion¬†mascarpone cheese itself is so buttery-rich, thick and there is no need to add more heavy cream. But “Every man to his taste”.
And you can add sugar and vanilla instead of honey.
Take glasses and layer the berries with the whipped mascarpone. Garnish with almond/amaretto cookies.

1-2 teaspoon honey (or sugar+vanilla)
3 cups assorted berries or jam
1 tbsp fine sugar
1-2 tsps zest of lemon
3-4 tbsps wine or liqueur
